Quinoa Salad

Ingredients

  • 1 Cup Dry Quinoa of choice (we like TriColor, Trader Joe’s brand)
  • 3 Peppers – Red, Orange and Yellow
  • 4 Mini Cucumbers
  • 12-16oz Cherry Tomatoes
  • 8oz Feta Cheese (prefer block over crumbles)
  • 1/3 Red Wine Vinegar
  • 2 Tbsp Italian Seasoning
  • Salt and Pepper to taste

Directions

  1. Cook Quinoa according to instructions – using 1 cup dry quinoa with 2 cups boiling water. Once cooked, let cool.
  2. While cooling, cut all vegetables and dice/crumble feta.
  3. Mix all ingredients together and refrigerate.
