Peach, Feta and Pecan Salad

  • Large Mesclun Mix*
  • 2 Peaches, white, yellow or other varietal*
  • 2 oz. Crumbled Feta*
  • 1/2 cup Candied Pecans*
  • 1/4 cup Red Onion, sliced and cut to size*
  • 4 Tbsp Meyer Lemon Olive Oil*
  • 3 Tbsp Honey Sweetened Apple Cider Vinegar*
  • Kosher Salt and Freshly Ground Pepper to taste


  1. Gather and wash ingredients as needed.
  2. In a medium bowl, add 4 Tbsp Olive Oil, 3 Tbsp Vinegar and whisk vigorously until smooth. Season to taste with salt and pepper.
  3. Add Mesclun to a large bowl. Pour dressing over greens and toss until coated.
  4. Slice peaches and onions to desired size and add to bowl, along with remaining ingredients.
  5. Toss again if desired and serve immediately.
