Harvest Nachos

This simple weeknight meal is hearty and easy to love!

  • 1 cup Ratatouille* (more or less to taste)
  • 3/4 cup Grilled Balsamic Chicken* (or Grilled Citrus Chicken*), diced or in strips (omit for vegetarian)
  • 1/2 cup Colby Jack cheese*, shredded
  • 1/4 cup black beans
  • Approx. 2oz Nacho chips of choice
  • Assorted toppings. Choose what you like best!

We suggest:

  • 2 tbsp jalapeño peppers*, sliced or chopped
  • 1 tbsp chopped fresh cilantro*
  • 1 – 2 tbsp sour cream

Also great with:

  • Bibb Lettuce*, & Avocados*, chopped
  • A squeeze of lime*


Spread nacho chips evenly onto a sheet pan, then sprinkle over ratatouille followed by the cheese, black beans, jalapeños and chicken.

Bake in oven at 425 degrees for 8-10 minutes or until cheese is melted.

Remove from oven and serve immediately with sour cream and other toppings as desired.
