This sometimes overlooked onion is surprisingly one of the most healthy for you! Super alternative in the kitchen...raw, roasted, grilled and pickled...each delicious!

Pickled red onions
- 1/2 large red onion, slivered
- 1 1/2 tsp salt
- 1/2 cup apple cider vinegar
- 1 tbsp maple syrup
- 1 cup water
Cut half of a large red onion into small slivers and place into a 12 oz. mason jar or any tight sealing glass jar of same measurement.
In a small bowl, combine the salt, apple cider vinegar, and maple syrup and mix well until salt is dissolved.
Add this mixture to the jar and then top the onions with 1 cup of water.
Place lid tightly on the jar and let it sit out for 12-14 hours.
Wait for the color of the onions to change to a light pink and then store in the fridge. ENJOY!
