With its full-bodied base of coconut milk, this balanced dish is perfect for vegan eating or just getting some extra veggies into your diet. Enjoy over the included basmati rice, and for an extra dash of flavor, top it with a squeeze from our fresh limes. 2 servings

Ingredients: sweet potato, eggplant, red peppers, onions, carrots, kale, olive oil, coconut milk(coconut, water, guar gum), fresh orange juice, salt, cinnamon, garam masala, cumin, coriander, turmeric, cayenne.
- Defrost curry.
- Empty contents into a small saucepan. Add 1-2 tablespoons of water.
- Bring to simmer and simmer on medium-low for 6-9 minutes, or until sauce reaches desired consistency.
- Pour over rice and enjoy!
